Denver's tourists and settlers starting writing home about restaurants and food in 1859.  The editor of the Rocky Mountain News and others often described new restaurants or updates to old ones.  Retired cooks, waitresses, restaurant owners, and suppliers shared their perspectives on food, service, and making a living.
